Cooking with Rooibos

With input from Europe, Asia and across Africa, added to the bountiful produce from rich soil and an ideal climate, South Africa was always going to be a culinary as well as a cultural melting pot. Cooking and cooking well, is taken very seriously and we’re delighted to feature some recipes here from a recently produced rooibos cookbook. A Touch of Rooibos is a compilation of superb recipes from fourteen of South African’s leading chefs.

Each of them regards rooibos as an important ingredient because it complements, intensifies and enhances natural flavours making it invaluable for lip-lickingly good marinades, sauces, soups and stocks.

There are nearly 100 recipes in the book and as you can imagine, everyone has their own particular favourite so there was some rather heated discussion in the office and, we even have to admit, the odd undignified tussle over the book, as to which would be featured here. Below are some samples, although we are pledged to mention that yes there are some other really super duper recipes in the book that we haven’t had room for here!
